Zucchini Chips

Be prepared as zucchini will shrink to about 1/4 of its original size and takes a relatively long time (12-16 hrs @160F). To prepare zucchini for the dehydrator –

  • Slice lengthwise in half and peel
  • If zucchini is large scoop out seeds/pith from center
  • Slice in ~1/8th” strips/chips
  • Toss with olive oil and kosher or sea salt

Easy on the salt. A little goes a long way since the zucchini shrinks so much. To me, these had a carmelized sort of flavor that tasted like French’s Onions without the batter coating.
